Hamburger Recipes

Our family uses a lot of hamburger (mostly because it's less expensive than other beef). Sometimes I stand there and look at that hamburger and think "what can I make with this that we haven't already had twelve times this month?"

Below are some of the recipes I use for hamburger dishes. Hopefully, this will give you some ideas. My greatest hope is that you will send me your hamburger recipes. I'm tired of my own!

  • Meat Loaf
    • 2 lb. hamburger
    • 1 egg
    • 4 tbls. barbecue sauce
    • 3 tbls. Worcestershire sauce
    • 1 package onion soup mix
    • 4 tbls. flour

    In a large bowl, mix all the ingredients except the hamburger and flour. Mix in the hamburger, then mix in the flour.

    Pat into a loaf shape and place in an oven safe pan. Bake uncovered at 375º for 45 minutes. Cover the top of the meat loaf with ketchup, and bake an additional 10 minutes.


    Wonderful Meat Loaf

    • l pound ground Chuck
    • ½ pound ground Sirloin
    • ½ pound ground top Round
    • 2 Beaten Eggs
    • l teasp. Salt
    • l tablesp. Parsley
    • l small onion chopped fine
    • ½ cup fresh Bread Crumbs
    • l teasp Worcestershire Sauce
    • l Tablesp. Pamesan Cheese
    • ¼ Cup Milk

    Mix gently but thoroughly. Make loaf. Bake at 350 uncovered about 50 minute or until golden brown.

    Meat Loaf Surprise (from Lisa in Ohio)
    • 1 unbaked meat loaf (see Meat Loaf recipe above)
    • 1 large onion
    • 1 clove garlic
    • 1 package of shredded cheddar cheese
    Put half of the uncooked meat loaf mixture in the bottom of the pan, put a layer of cheese, onions, and garlic, then form the rest of the meatloaf over the top squeezing the edges together, then bake.

    It looks like a normal meat loaf but when you slice it there is a surprise in the middle!

    Spaghetti
    I use this recipe to make a very large batch of spaghetti sauce. I usually use about ¼ of it per meal. I then freeze or can the remainder.

    • 4 lb. hamburger (browned and drained)
    • 1 gal. tomatoes
    • 4 clv. garlic
    • 1/2 lg. onion
    • 1/4 c. Italian seasonings
    • 2 1/2 tsp salt
  • 1/2 tsp pepper
  • 5 Tblsp corn starch
  • 1/4 tsp crushed red peppers
  • 2 Tblsp sugar
  • 1 tsp paprika
  • 1 small can of tomato paste
  • Place tomatoes in sauce pan to be heated.

    Take about one cup of the tomatoes and place in a blender. Add all seasonings, salt, pepper, red pepper, sugar, and paprika and blend well. Add back to tomatoes. Mince onions and garlic very fine and add to tomatoes.

    Heat mixture until bubbling. Take a cup of mixture and put in a mixing bowl. Gradually add in corn starch and blend well. Add back into the tomatoes slowly.

    Add in browned hamburger. Heat to boiling then simmer for 15-20 minutes.

    Serve over spaghetti noodles or, mix with regular egg noodles.

    Spaghetti Pizza (from Kristin in Ohio)

    • 1 lb. hamburger (browned and drained)
    • 1 clv. garlic
    • 1 lg. onion
    • 1 package of pepperoni
    • 1 package of Mozzarella cheese
    • 1 small jar of pizza sauce
    Take cooked spaghetti noodles, mix with above ingredients and evenly fill a glass cake pan. Bake for 20 minutes or until bubbly.

    Italian Meat Balls
    These meat balls are great to make in advance and freeze (after they are baked). Then when you are in a hurry, simply stick them in the oven for 20 minutes.
    • 2 lb. hamburger
    • 1 egg
    • 2 tbls. Italian salad dressing
    • ½ tbls. Italian seasoning
    • 2 tbls. Worcestershire sauce
    • 1 package onion soup mix
    • 3 tbls. flour
    In a large bowl, mix all the ingredients except the hamburger and flour. Mix in the hamburger next, and then the flour.

    Roll into 1 inch diameter balls. Place on slotted broiling pan and bake at 375º for 20 minutes.

    Once the meat balls are done, they can be served with spaghetti sauce (see recipe above). I like to cover them with mushroom gravy (canned or use the packaged mix), heat in the oven for an additional 20 minutes. I then serve them with mashed potatoes. The kids love this meal.

    Stuffed Cabbage
    This recipe works GREAT in a crock pot
    • 12 large cabbage leaves
    • 1 lb. hamburger
    • ½ cup cooked rice (see Easy Rice Recipe on the Recipes page
    • ½ teaspoon salt
    • pepper to taste
    • ¼ teaspoon leaf thyme
    • ¼ teaspoon nutmeg
    • ¼ teaspoon cinnamon
    • 1 can (6 oz.) tomato paste
    • ¾ cup water
    Wash cabbage leaves. Boil 4 cups water. Turn heat off. Soak leaves in water for about 5 minutes. Drain and cool.

    Combine the rest of the ingredients (except tomato paste and water). Place 2 tablespoons of mixture on each leaf and roll firmly. Stack the rolls in the crock pot. Mix tomato paste and water and pour over rolls.

    Cover and cook on low for 8-10 hours.

    This is a great

    Ranch Burgers (from Dawn in Ohio)
    • 1 lb. hamburger
    • ½ large onion chopped fine
    • 1 package of dry Ranch dressing mix

    Mix above ingredients well and form into patties and grill.

    Pan Cheeseburgers

    • 1 lb. hamburger (browned and drained)
    • 1 large onion
    • 1 small can mushrooms
    • 1 package of shredded cheddar cheese
    • 1 batch of pancake batter (see the Pancake recipe on the Recipes page

    Mix everything except the pancake batter and spread into a greased glass cake pan. Pour pancake batter over mixture and bake at 375º for 30 minutes.

    Cut into squares and serve hot.

    Best Taco Salad
    This makes a huge bowl of taco salad and everyone loves it. Makes a great fun meal.

    • 1 head lettuce, chopped
    • 8 oz. shredded Cheddar cheese
    • 1 lg chopped onion
    • 1 pkg. taco flavored chips
    • 1 lb. hamburger
    • 1 small can kidney beans
    • 4 medium tomatoes, chopped
    • 1 pkg taco seasoning
    Dressing:
    • 12 oz Thousand Island dressing
    • 4 oz. taco sauce
  • 2 tablespoons sugar
  • 1 tablespoon taco seasoning
  • Brown hamburger, add taco seasoning. Reserve 1 tablespoon for dressing. Allow hamburger to cool. Layer salad ingredients in bowl, starting with lettuce and ending with cheese. Cover and refrigerate. At serving time, toss salad with dressing and chips.

    Chili Soup
    Super easy recipe! Works GREAT in the crock pot.
    • 1 lb. hamburger (browned and drained)
    • 1 quart spaghetti sauce (see Spaghetti recipe above)
    • 1 quart whole tomatoes
    • 2 cans chili beans
    • 1 large onion chopped
    Mix all ingredients in a crock pot and cook on low for 6-8 hours.

    I was reading your chili recipe, and I do it almost the same (I always add salsa), but one thing I do to make it even easier - if my hamburger is frozen I throw it in the crock pot on low overnight, then in the morning I drain off any grease and crumble it up, add the other ingredients and let it cook! The hamburger browns well overnight, and I don't have to get another pan dirty or try to cook hamburger first thing in the morning.

    Shepherd's Pie (from Lisa in Ohio)
    This recipe is very yummy and you can make it all ahead and bake it the next day.
    • 1 lb. hamburger
    • 1 large onion
    • 1 clove garlic
    • 1 quart green beans
    • 1 quart spaghetti sauce
    • salsa to taste (optional)
    • 1 package of shredded cheddar cheese
    • instant mashed potatoes (about 8 servings)
    Brown the hamburger with onions and garlic. In big bowl mix hamburger, green beans, tomatoes (or i use salsa)or spaghetti sauce.

    Pour into casserole and smooth out the top. Put a layer of sliced or shredded cheese. Make some instant mashed potatoes. Spread them on top of the hamburger. Layer more cheese on top.

    Bake until hamburger mixture is bubbly and top is "golden brown." Mix all ingredients in a crock pot and cook on low for 6-8 hours.

    Poor Man's Dinner (from Kathy in Ohio)
    • 1 lb. hamburger
    • 1 large onion chopped
    • 1 clove garlic chopped
    • ½ green pepper
    • 1 package of shredded cheddar cheese
    • 4-6 large potatoes
    Brown the hamburger with onions and garlic. Drain and cool. Mix all the other ingredients (except the potatoes).

    Cut potatoes in half. Scoop some of the potato out of the center (enough to make an indent). Form hamburger mixture into balls (approximately ½ cup) and place on potato half. Cover with foil and grill (approx. 20 minutes). You can also bake this in the oven or cook it in the crock pot.
