Impossible Cheeseburger Pie (from Dawn in Ohio)
    • 1# browned ground beef
    • 1 cup chopped onion
    • 1/2 tsp salt
    • 1 C of shredded cheddar cheese (haha try 2-3 cups!)
    • 1/2 cup bisquick
    • 1 cup milk
    • 2 eggs

Brown the beef and onions, add salt. Pour into a 9" baking dish and cover with cheese. Mix Bisquick, milk and eggs. Pour that mixture on top of cheese. (If you use more cheese then make more of the bisquick mixture.) Bake at 400 (375 for the "more cheese" version) for about 25 minutes or until a knife inserted in the center comes out cleanly.

Spinach Beef Biscuit Bake (from Dawn in Ohio)
    • 2 tubes of buttermilk biscuits
    • 1-1½# browned ground beef
    • Worstershire sauce to taste
    • ½ c chopped onion
    • 2 to 3 eggs
    • 1 pk (10oz.) frozen chopped spinach thawed and squeezed dry
    • 2 jar mushrooms
    • 16 oz shredded Monterey jack cheese*
    • 8-16oz shredded parmesan cheese*
    • 1-1½ tsp garlic powder
    • salt and pepper to taste
    • 1-2 tbls butter melted
Press and flatten biscuits onto the bottom and up the sides of a greased 11x7 (or there about) baking dish. Brown the ground beef, onion and mushrooms. (I add plenty of worstershire sauce while browning, you may choose to omit this.) In a bowl beat the eggs. Add the spinach and stir well. Stir in the cheeses, garlic powder, salt and pepper; mix well, then add the beef mixture, stir well. Spoon onto prepared crust and drizzle with butter.

Bake uncovered at 375 for 25-30 minutes or until crust is lightly browned.

*If you add this much cheese you may have to bake longer. This may require you to put foil on the edges of your crust to prevent burning it.

    Enchiladas (from Brenda in Virginia)
    • 1 lb ground beef
    • 1 onion
    • 2 tsp salt
    • ¼ tsp pepper
    • 1 -2 tsp chili powder
    • 2 cups taco sauce (med. or hot)
    • 1 doz. corn tortillas
    • salad oil
    • 1 ½ cup grated sharp cheddar
Brown beef & onion - add seasonings - let simmer. Put ½" salad oil in skillet- place over low heat - dip tortilla in warm oil drain. Spoon 2 tsp taco sauce onto tortilla. Spoon a generous tablespoon filling on sauce - top with grated cheese. Roll up and place close together in large baking pan, open side down. Pour remaining sauce and cheese over top. Brenda's Note: To skip the extra oil, heat the tortillas in microwave wrapped in damp paper towels. This will soften the tortillas without adding the extra fat.

    Chili (from Brenda in Virginia)
    • 2 lbs hamburger
    • 6 cloves garlic
    • 4 Tbsp chili powder
    • 15 Tbsp paprika
    • 1 tsp black pepper
    • 1 tsp red pepper
    • 1 tsp white pepper
    • 1 tsp salt
    • 2 Tbsp cumin powder
    • 4 Tbsp flour
    • 4 cups water
    • 1 can of tomatoes diced
    • 1 can kidney beans

Brown meat and drain. Add garlic, spices and flour. Stir well, add water, tomatoes, and kidney beans. When hot through it is ready to serve.

Brenda's note: This is good with home canned tomatoes. I would also cut back on some of the spices. The Mexican lady that gave me the original recipe said that this combination will dissolve your spoon and possibly your pan. This recipe makes a large amount. I usually cut it in half.
