Recipes: Side Dishes
Grandma's Noodles
Remember those wonderful noodles that grandma made? Guess what, they're easy!
- 3 eggs
- 2 ½ cups flour
- 1 teaspoon salt
Whisk eggs and salt in a large mixing bowl. Gradually add in 2 cups flour. Using the remaining ½ cup flour, knead dough until stiff. Divide dough into 4 parts. Roll dough out very thin on a floured surface. Use a pizza cutter to cut noodles into desired width.
Drop noodles into boiling beef or chicken broth. Usually takes approximately 20 minutes for noodles to be completely cooked.
I like to use a pasta machine to roll and cut my noodles. Cut's the processing time way down.

Stuffing
- 1 cup finely chopped celery
- ½ cup chopped onion
- ½ cup sliced mushrooms
- ½ cup melted butter
- 1 teas. poultry seasoning or sage
- ½ teas. salt
- pepper to taste
- ½ to 1 cup chicken broth
- 3 eggs
- 8 cups dry bread cubes
Mix first 8 ingredients. Beat eggs and add to first mixture. Pour over bread cubes and mix.
Stuffing can then be placed inside the bird for baking, or you can bake seperatly in the oven or a crock pot (30 minutes at 325 in oven, 2 hours on high in the crock pot.)
I usually stuff the bird and have stuffing left over. I put the giblets of the turkey in the bottom of the crock pot and cover that with the extra stuffing and
let that cook on low the whole time my turkey is baking (usually, about 4 hours).
