Easy Easy Rice
My kids love rice and it's good for them. It makes a great breakfast if you are tired of boxed cereal (or tired of the price of boxed cereal). Hot rice with a little sugar and milk is a great substitute. However, I hated standing over the stove stirring rice as it cooked. So, I've found two methods of cooking rice that make it super easy.

  • 1 cup uncooked white rice
  • 2 cups water
1) If you have a vegetable steamer, the rice can be placed in a bowl inside the steamer rack and steamed for 45 minutes. No stirring required.

OR

2) Use a double boiler. Place 2-3 inches of water in the bottom pan. Put rice and water in the upper pan and cook on high setting for 30 minutes. No stirring required. (See, I told you it was easy!)

Makes 3 servings, 1 cup each.

Easy Easy Oatmeal
This is another great breakfast idea. Instead of paying extra money for instant oatmeal in the single serve packages, use quick oats in the microwave. This is just as quick and far less expensive. And again, there is no standing over the stove stirring for this recipe!

  • ½ cup uncooked quick oats
  • 1 cup water
  • dash salt
  • ¼ teaspoon cinnamon
  • 1 teaspoon sugar
  • 3 tablespoons raisens (substitute any fruit)
  • milk to taste
Mix all the above ingredients (except the milk) in a large microwave safe bowl. Microwave on high setting for 2 minutes. Add milk to taste and serve.

Pancakes
So easy, and the kids LOVE them.

  • 1¼ cup all purpose flour
  • 2 teaspoons baking powder
  • 1 beaten egg
  • 1 cup milk
  • 1 tablespoon vegetable oil
Stir together flour, sugar, baking powder. Stir together egg, milk and oil. Add all at once to flour mixture and stir till blended. Pour ¼ cup batter onto a hot, lightly greased griddle or heavy skillet for a standard size pancake. Turn when top of pancake is bubbled.

Makes about 10 standard size pancakes.

French Toast
So easy, and the kids LOVE them.

  • 4 eggs
  • 2 tablespoons sugar
  • 1 teaspoon cinn.
  • ¼ cup milk
  • 12 slices of bread (any type)
Mix first four ingredients together. Dip bread slices in mixture making sure that both sides are covered. Place slices on hot griddle until brown on both sides.

Sausage Casserole
This casserole can be made the night before needed and used the next morning. It's great when you know you are going to have overnight guests and little time in the morning.

  • 1 lb. package of sausage, cooked, drained, and crumbled
  • 4½ cups dry bread cubes
  • 2 cups shredded sharp cheddar chesse
  • 10 beaten eggs
  • 4 cups milk
  • 1 teas. dry mustard
  • 1 teas. salt
  • ½ cup chopped onion
  • pepper to taste
  • ½ cup sliced mushrooms
  • ½ cup chopped tomatoes (optional)
  • ½ cup chopped green peppers (optional)
Place bread in greased 9x13" baking dish. Sprinkle with cheese. Combine eggs, milk, and spices and pour over bread and cheese. Sprinkle the remaining ingredients over the top.

Cover and chill overnight. Bake uncovered at 325ºF for 1 hour.

Sausage & Hashbrowns Casserole
This is the same as the above recipe except you use hashbrowns instead of bread crumbs and you reduce the amount of milk.

  • 1 lb. package of sausage, cooked, drained, and crumbled
  • 1 frozen package of Hashbrown potatoes
  • 2 cups shredded sharp cheddar chesse
  • 10 beaten eggs
  • 1 cup milk
  • 1 teas. dry mustard
  • 1 teas. salt
  • ½ cup chopped onion
  • pepper to taste
  • ½ cup sliced mushrooms
  • ½ cup chopped tomatoes (opional)
  • ½ cup chopped green peppers (optional)
Place potatoes in greased 9x13" baking dish. Sprinkle with cheese. Combine eggs, milk, and spices and pour over bread and cheese. Sprinkle the remaining ingredients over the top.

Cover and chill overnight. Bake uncovered at 325ºF for 1 hour.

Crock Pot Sausage & Potatoes
This recipe is even better for overnight guest because you can fix it the night before and get 8 hours of sleep and the breakfast is hot and ready to eat the next morning.

  • 1½ lbs. sliced smoked sausage
  • 1 frozen (2 lb.) package of hashbrowns
  • 1 cup chopped onion
  • 1 glove sliced garlic (or garlic powder to taste)
  • pepper to taste
  • ½ teas. salt
  • 1 can cheddar cheese soup
  • 1 soup can of milk
Grease inside of crock pot. Mix everything except the soup and milk and place in the pot. Whisk soup and milk together and pour over other ingredients.

Cook on low for 6 to 8 hours.
