Homemade Bread
This is an easy recipe and the dough freezes well. Frozen bread dough can be placed in the baking dish overnight to thaw. Once the dough rises, bake as instructed in the recipe.

  • 5¾ to 6¼ cups all-purpose flour
  • 1 package active dry yeast
  • 2¼ cups milk
  • 2 tablespoons sugar
  • 1 tablespoon shortening
  • 2 teaspoons salt

In a large mixer bowl combine 2½ cups of the flour and the yeast. In a saucepan heat milk, sugar, shortening, and salt just till warm (115º to 120º) and shortening is almost melted; stir constantly. Add to flour mixture. Beat a low speed of electric mixer ½ minute, scraping sides of boul. Beat 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon. Turn out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in a greased bowl; turn once. Cover; let rise in a warm place till double (about 1¼ hours).

Punch down; turn out onto a lightly floured surface. Divide dough in half. Cover; let rest 10 minutes. Lightly grease two 8x4x2 inch loaf pans. Shape each half of dough into a loaf by patting or rolling. To pat dough, gently pull the dough into a loaf shape, tucking the edges beneath. Place in pans. Cover; let rise in a warm place till nearly double (45 to 60 minutes). Bake in a 375º oven about 30 minutes or till done. Remove from pans; cool. Makes 2 loaves.

KFC Biscuits (Kinda Familiar Country Biscuits)
These are great biscuits and easy to make. I'm told that this is the recipe used by KFC (but can't verify that).

  • 2 cups self rising flour
  • 1 tablespoon sugar
  • 1 cup milk
  • 1/3 cup mayo

Mix all ingredients in large mixing bowl. Roll dough to approxiamately ¾ inch thickness. Use a glass (about 3 inches in diameter) to cut out the biscuits. Bake at 350º for 30 minutes, or until light brown.
